Perfect to accompany a burger or sandwiches, they don't even require you to turn on the oven, and their natural sweetness is accentuated by a handful of fresh mint and apple cider vinegar for a sweet tangy crunch.
It is apple season after all. So now's the time to enjoy fresh, local produce. And who doesn't have loads of fresh mint still growing in the garden?
These crispy, crunchy sweet "fries" would be great to bring to a potluck, picnic or bar-be-que. They travel very well and doesn't need immediate refrigeration. And the recipe can easily be doubled or quadrupled for a large crowd.
The "fries" are great for snacking too! And the cinnamon sugar dipping sauce is the perfect accompaniment. It's SOOOOOOO good!

Apple "Fries" with Mint (and Cinnamon Sugar Dipping Sauce!)
(serves 2)
Two apples
4 Tablespoons olive oil
2 Tablespoons apple cider vinegar
1 Tablespoon fresh lime juice
1/2 teaspoon sugar
Handful of fresh mint leaves
Kosher salt
Fresh ground black pepper
For the dipping sauce
1/4 cup mayonnaise
1 teaspoon cinnamon
1/2 teaspoon sugar
Cut the apples into quarters, discarding the cores, then cut each section crosswise into matchsticks.
In a medium bowl, whisk to combine the olive oil, apple cider vinegar, lime juice and sugar. Add the apples to the dressing, and toss to coat. Chop the mint leaves and stir into the apple mixture. Season to taste with salt and pepper.
For the dipping sauce, whisk the cinnamon and sugar into the mayonnaise and serve alongside as a sauce.
